Mediterranean Chickpea Salad
What you need

Ingredients

  • 400 g canned chickpeas, drained
  • 1 cucumber, diced
  • 250 g cherry tomatoes, halved
  • ½ red onion, finely sliced
  • 100 g feta, cubed
  • 2 tbsp chopped parsley
  • 2 tbsp olive oil
  • 1½ tbsp lemon juice
  • Salt and black pepper
Step by step

Method

  1. Tip the chickpeas into a sieve, rinse thoroughly under cold water and leave them to drain while you prepare the vegetables.
  2. Dice the cucumber, halve the tomatoes and slice the red onion as finely as possible. Pat away excess tomato and cucumber moisture.
  3. Put the chickpeas, cucumber, tomatoes, onion and parsley in a large bowl.
  4. Whisk the olive oil and lemon juice with a small pinch of salt and several grinds of black pepper.
  5. Pour the dressing over the chickpea mixture and toss well. Leave it to stand for 10 minutes at room temperature.
  6. Add the feta and fold gently so the cubes do not break down. Taste, adjust the lemon or seasoning and serve.

Why the salad improves after ten minutes

This sturdy salad combines creamy chickpeas and feta with crisp cucumber, juicy tomatoes and sharp red onion. It travels well, improves after a short rest and is filling enough for lunch without feeling heavy.

Avoiding a watery bowl and broken feta

Cucumber and tomatoes release liquid once salted, so pat them dry and use only a modest first pinch of salt. Let the chickpeas absorb the lemon dressing before adding feta. Fold the cheese through last with a broad spoon rather than repeatedly stirring it into crumbs.

Removing excess vegetable moisture

Rinse canned chickpeas under cold water until the foam disappears, then drain very well. If raw onion tastes harsh, soak the slices in cold water for 10 minutes and pat them dry before adding them.

Chickpeas, feta and sharp lemon dressing

Rinse canned chickpeas until the water runs clear to remove the canning liquid, then drain thoroughly. Block feta cut into cubes stays distinct during tossing. Thin red onion gives bite without dominating; if yours is very strong, rinse the slices briefly in cold water and dry them before adding.

Ways to make the salad more substantial

Add roasted pepper, olives or chopped artichoke hearts. White beans work in place of chickpeas, and fresh mint or dill can join the parsley. Leave out the feta for a dairy-free version and increase the salt only after tasting.

Serving it as a side or lunch

Serve with warm flatbread, grilled chicken or fish. For a packed lunch, place the salad over greens shortly before eating so the leaves stay crisp.

Making the salad ahead

Refrigerate in a covered container for up to 3 days. The cucumber softens gradually but remains pleasant. Stir and taste again before serving, as chilled food often needs a fresh squeeze of lemon.
