What you need

Ingredients

  • 6 chicken thighs
  • 600 g baby potatoes, halved
  • 3 carrots, chopped
  • 1 onion, cut into wedges
  • 2 tbsp olive oil
  • 1 lemon, sliced
  • 3 garlic cloves
  • 1 tsp dried thyme
  • Salt and black pepper
Step by step

Method

  1. Heat the oven to 210°C conventional or 200°C fan. Choose a roasting pan large enough to hold everything in one layer.
  2. Halve the potatoes, cut the carrots into thick pieces and separate the onion into wedges. Lightly crush the garlic cloves.
  3. Put the vegetables in the pan with 1 tablespoon olive oil, thyme, salt and pepper. Toss well and roast for 10 minutes.
  4. Pat the chicken thighs dry, rub with the remaining oil and season. Place them skin-side up among the partly cooked vegetables.
  5. Tuck the lemon slices and garlic around the chicken, keeping most lemon off the skin so it can brown.
  6. Roast for 30–35 minutes, turning the vegetables once, until the chicken reaches at least 74°C and the potatoes are tender.
  7. Rest for 5 minutes. Squeeze one roasted lemon slice into the pan juices, taste and spoon over the chicken to serve.

How one pan develops lemony juices

Chicken thighs, potatoes and carrots share one roasting pan in this bright, dependable family dinner. Lemon softens and perfumes as it roasts, while the chicken juices season the vegetables underneath.

Chicken thighs, potatoes and lemon

Bone-in, skin-on thighs stay juicy while the vegetables roast and their rendered fat seasons the pan. Halved baby potatoes cook more reliably than large floury chunks. Use unwaxed lemon when possible because the slices roast with their peel, and crush the garlic lightly so it sweetens without disappearing.

Giving the potatoes a head start

Use a large metal pan rather than a deep casserole so the ingredients roast instead of steam. Halve small potatoes and quarter larger ones. Pat the chicken skin dry and keep it facing upward throughout cooking.

Getting crisp skin and tender potatoes together

Placing lemon slices on top of the chicken traps steam and prevents browning, so tuck them around the meat. Do not skip the vegetables' ten-minute head start. If the pan is crowded, use two pans; cramped chicken releases moisture and leaves both the skin and potatoes pale.

Vegetable and herb alternatives

Replace carrots with fennel or bell pepper, or add olives for the final 10 minutes. Rosemary works instead of thyme. Boneless thighs cook faster, so add them after the potatoes have roasted for 15 minutes.

Bringing the whole tray to the table

A green salad, steamed beans or plain yogurt with herbs are enough alongside. Spoon the lemony pan juices over each serving.

Reheating chicken and potatoes

Refrigerate for up to 3 days. Reheat chicken and vegetables covered until steaming hot, then uncover briefly to crisp the skin. Freeze cooked chicken separately from the potatoes for best texture.
